NFSC 230 Syllabus Semester: Fall 2006 Course #: NFSC 230 (formerly NFSC 160) Title: Introduction to Foodservice Administration (Introduction to Management) Lecture: T/R 8:00 - 9:15 AM (YUK!!) Prerequisites: NFSC 120 recommended. Organization, administration, and management of foodservice operations. Includes principles of safe and sanitary food handling and design of retail foodservice establishments. ServSafe Certification is NOT available as part of the course. This is a mistake in the course catalog. Required Text: Management Practice in Dietetics, 2nd edition, 2006, Nancy Hudson, MS, RD Course Objectives: Basic knowledge of an organization00 hierarchy structure and strategic management (plans and negotiations to reach desired mission/ goals.) Basic knowledge of needs assessment (performance analysis, gap analysis between current and desired outcomes, and identifying the priorities to reach the needs of the organization.) Basic knowledge of outcomes-based research (utilizing the outcomes as feedback to prevent errors or improve performance within the organization.) Basic knowledge and demonstrating ability of program planning, monitoring, and evaluation, with emphasis on risk management (preventing and managing legal or financial issues/ occurrences.) Basic knowledge of organizational change theory (determining the need to change, development of a vision, consensus building, identifying barriers to implementation, walk the talk, creating an overall change strategy, implementation and evaluation.) Basic knowledge of human resource management including: labor relations, diversity issues, ethics of care, and interpersonal communication skills. Demonstrating ability to prepare and present in-services based on the needs of human resource management. Basic knowledge of management theories and concepts of human and group dynamics Basic knowledge of marketing theory and techniques, information management and quality improvement Demonstrating ability to create marketing brochures based on marketing research and information management. All grades, lectures, activities and assignments will be posted there for you to view and/ or print-out at your convenience. In addition, any announcements will be posted for INSTANT communication to the class. It is your responsibility to monitor your grades and postings on a daily, if not weekly, basis. Because grades are posted by human beings, there is a potential for 00uman error.00 Please inform your instructor (me) immediately if an error has been made. Keep all documents (and emails) to verify mistakes. No one else will keep track for you!! Weekly Activities/ Assignments: 12 written activities/assignments are assigned throughout the semester: Each activity/assignment is worth 25 points Assigned in class and ALWAYS due on the next consecutive Tuesday, unless otherwise indicated Must be typewritten Place name, date assignment is due, and the title of the assignment in the upper right corner or credit will not be awarded Grading will be based on thoroughness and completeness of responses PowerPoint00/font> Assignment/ Presentation: You will be asked to divide in groups of two to create and present a PowerPoint00presentation in the form of an 00n-service00on various management-related topics at the end of the semester. A more thorough explanation of this assignment will be given on October 24, 2006. Grading Policy: Grades are derived as a percentage of the total possible points. A 100 - 90% B 89 0080% C 79 0070% D 69 0060% F 59% and below The instructor reserves the right to add or deduct up to 10 percent of the grade based on attendance and participation in lecture sessions. Course Policies and Procedures: Assignments are due IN CLASS on day scheduled/determined. Alternative to in-class submission, assignments may be submitted via e-mail or office drop-off with PRIOR approval of instructor. 005%-Rule00 Assignments may be turned in late (ONLY up to two weeks from the due date) for a 25% deduction. This policy applies even if the assignment is turned-in on the same day after class. Remember that 75% is a 0000and may directly affect your final grade if assignments are consistently turned-in late. You are exempt from the 005%-rule00if you have written medical verification (from a physician.) No make-up exams will be given without written medical verification (from a physician), dated and provided to the instructor upon return to class. All time lines, schedules, and due dates are subject to change and will be announced in class, as necessary. University policy states that Add/Drops must be completed within the first two to four weeks of the semester. Please note that to drop a course after the end of the fourth week of classes (after 09/01/06) requires a 00erious and compelling00reason. A written documentation of the reason for dropping the course is required. Keep cell phones and pagers 00ff00or on 00ibrate00during class time. Children are not allowed to attend lecture or laboratory meetings. Student Requirements: Please ask questions when information is unclear. More than likely you are not the only one with the same question. Because collaborative learning activities will be implemented in class, attendance is highly recommended. It is expected that students will be seated and prepared to begin study promptly at the beginning of the class period. If you have to arrive late or leave early please have PRIOR approval. Make sure that you arrive or depart discreetly. Late arrivals and early departures are disruptive and discourteous to your classmates and instructor. Follow notes during class lectures and add from lecture when appropriate. Many exam/ quiz questions may come from discussions in class.
